Mahamri is Kenyan coastal Swahili meal that is always have unique taste. The spices in them blend well and it tastes great generally
Cooking Instructions

Extract the cardamon seeds from the pods

Beat them up in a pounder till soft and smooth

Take the yeast and put in warm water for ten minutes. Add into the floor. Mix well

Add cardamon and sugar. Mix well

Add the coconut oil little by little and start kneading. Ensure the dough is smooth. Let it rest until it doubles. Punch it down. Divide into 4 parts

Roll each and cut into 4 parts

Fry them in low heat. Flip them while frying

Serve them with hot tea or any drink of your choice

Mango Daliya/ Mango porridge
Mango Dalia is a sweet porridge made with broken wheat, milk and mangoes. My mother used to make this sweet porridge for breakfast and I used to save some and had it after dinner as a dessert. It is a great way to use mangoes which are very healthy and nutritious. I don't use any sweetner for this Dalia as mango puree provides the sweetness and creamy texture as well. But sometimes the mangoes are not sweet enough and you have to add a little sugar or any other sweetner to enhance the taste.This porridge is a great way to start your day. Broken wheat provides all the benefits of a grain, mangoes provide the nutrients of a fruit and milk is a great source of calcium and protein. Together they make a complete healthy breakfast meal. It is good for growing kids also. This one pot meal can be prepared in advance and can be kept in the refrigerator for 6-7 hours. It tastes best when served chilled. #CookClick


Hawaiian Malasada
My husband and I tried to recreate the malasada that was featured in a tv show that was about Hawaii. We were very curious about it and wanted to know how different it is from a deep fried bread and Sata Andagi from Okinawa!We used Katakuriko instead of corn starch which was used in a cookbook since we didn't have any on hand.They are very fluffy and delicious!!This is an easy dough since you don't need to let it rest. It's easy to roll the dough as it's not that tough.They don't make any sizzling sounds when you deep fry them . Maybe because they don't contain moisture that much...but you can still get a nice golden color.Put each malasada in a plastic bag with granulated sugar and shake it around to easily coat them with sugar. This dish is pronounced (shoe-shoe-uh). My grandpa grew up in Madagascar as a missionary kid. This was a typical breakfast food for them. Rice can be leftover from the night before, reheat on the stove with a bit of milk or in the microwave.

Oatmeal & Yomogi Steamed Bread
I based this on my recipe for "Oatmeal Cinnamon Steamed Bread".I love the crust of kusa mochi (it's the same as chewy yomogi). So, I tried making a steamed pan with that taste.You could use the oatmeal as is, but the texture will be moister and chewier with the extra step of pulverizing it into a powder.Prevent condensation from dripping onto the buns by wrapping the steamer lid in cloth, and fixing it with a rubber band. Butter Mochi: A Taste of Hawaii
This is a butter mochi that my friend made for me based on a recipe from Ku:nel magazine.Thanks to this butter mochi, I got over my hesitation with coconut milk.Japanese mochiko is high quality, but if you make it with the mochiko they sell in Japan, it ends up being really like mochi cakes, which isn't quite right for butter mochi. Dango flour made from a mix of non-glutinous rice and sticky rice is probably better. If you can get your hands on the Koda Farms brand Mochiko that they sell in Hawaii and the States, that's probably the best! It's just the right balance of chewiness and stickiness.
