This app has re-ignited my enjoyment of cooking. I am learning quite fast, although keeping things simple. This is my first recipe; I pretty much made this up as I went along, so the ingredients quantities may be a bit sketchy. Hope you enjoy it.

Chicken in a Lemon Ginger and Mushroom Sauce

Ingredients

  1. Olive oil
  2. 2chicken breasts diced and seasoned with a little salt
  3. 1onion chopped
  4. 1 clovegarlic chopped
  5. 1red pepper sliced
  6. 1heaped teaspoon ground Ginger
  7. Approx 50-75 ml lemon juice
  8. 300 mlChicken Stock (made with stock cube and boiled water)
  9. 1 (300 ml)can condensed mushroom soup
  10. 2 handfulsfresh spinach

Cooking Instructions

    Cook onion and garlic in olive oil until soft. Add ground ginger and mix well. Add red pepper. Cook until soft

    Add diced chicken and cook until brown on all sides

  3. 3

    Meanwhile mix chicken stock,soup and lemon juice and stir until smooth.

  4. 4

    Add sauce mix to pan and stir well. Bring to the boil until slightly reduced. Simmer for 10 -15 minutes to make sure chicken thoroughly cooked; add spinach and mix in for the last 5 minutes

    I served with rice
