Tortilla Baguettes were my only source of food during my whole undergraduate course.
Cooking Instructions

Chop and slice the potatoes and onions.

Place them in a large pan with generous amount of oil. Medium heat. Stir regularlly.

Using a spatula, check that everything is soft

Whisk the eggs, add the potatoes and onions after removing the oil (which can be reused in the future). Add salt to taste and mix all together.

In a smaller pan. Add little bit of oil and pour the mix. Medium heat if you like it well done or high heat if you like it soggy. Use a spatula around the edge of the pan to give a good round shape. With help of a plate, flip the pan and place the tortilla back from the undone side.

How to flip the tortilla

Using a plate again, flip the pan to get the tortilla out without breaking it. Leave it out for 10 min before serving. Enjoy it!

This is a variation of a recipe that I learnt whilst I was living in Spain. Normally you would fry the potato, but I heat them in the microwave to reduce calories. I also changed the technique for mashing the potatoes. Even with all the adjustments, these omelettes will come out tasting very good.In Step 4, see how the mixture looks, then decide whether you need to use a 5th egg. If there is too much potato and not enough egg, then you will get a crumbly omelette, Or, if you add too much egg, the potato will float to the top. I love Spanish omelets (Tortilla de patatas) but frying is so annoying, plus the kitchen gets messy and cleaning up is so much work. So I came up with this slightly low-calorie and more convenient method.The cooking time will vary depending on your microwave, so adjust accordingly. For my microwave, 8 minutes was fine. When flipping over the omelet, place the one-sided browned omelet on a flat plate larger than the omelet itself, and then flip it so that the uncooked side can brown in the frying pan.
