  1. 5.3 ozsmall shrimp (about 150 grams)
  2. 3/4 cupall-purpose flour (about 100 grams)
  3. 3/4 cupchickpea flour (about 100 grams)
  4. 1 1/4 cupscold water (about 280 ml)
  5. 1medium scallion
  6. Fresh parsley
  7. Salt
  8. Olive oil

    Ingredients

    In a bowl, combine the flours, finely chopped white part of the scallion, chopped parsley leaves, and salt to taste.

    Stir and add the water until the batter is smooth with no lumps. Add the shrimp and refrigerate for one hour.

    Pour about 3/4 inch of olive oil into the widest skillet you have and heat over medium-high. Drop in spoonfuls of batter and fry until golden brown.

    The key is to use just a little batter and spread it out so the fritters are thin. One large spoonful is enough—I use a big spoon to spread the batter across the whole skillet, but make sure they stay very thin...
