The night before, or in the morning if you want to cook it overnight, soak the chickpeas in water for 10 to 12 hours.

When you're ready to start cooking, drain the chickpeas. Peel and wash the vegetables. Wash any meats, bacon, or bones you plan to use. Place the chickpeas in the slow cooker first, then add the vegetables, and finally the meat. Cover with hot water and close the lid.

Turn the slow cooker on high and set it for 10 hours. After this time, taste and adjust the salt if needed. Your cocido is ready to serve.
