Boil milk in a kadhai, once it’s boiled use lemon juice to curdle the milk and keep stirring and chena is ready, seive it in a muslin cloth.

Put chena in a blending jar and make it smooth, add 1/4 cup milk, powdered sugar and cardamom powder and blend well for smooth consistency.

Take container and greased it with ghee and pour all the mixture and placed it on steamer and steam on low flame for 30 mins.

Meanwhile whipped the whipping cream and take two piping bags with desired nozzles, 1st piping bag will have a orange mousse with a mixture of whipped cream and orange emulsion, 2nd piping bag will have a orange glaze.

After 30 mins take out the tray from the steamer and let it cool in a fridge for 30mins.

To assemble cut sandesh into round shaped with the help of cutter and placed 1st layer then orange mousse then repeat till 3 layers and on top layer put orange glaze and decorate it with orange mousse, choco chips and motichoor laddoo.
