Ingredients

8 people
  • 1 cuprolled oats
  • 1 cupplain flour
  • 2/3 cupsugar
  • 1 1/2 tbspbaking powder
  • 1 tspsoda
  • 1/4 tspsalt
  • 1/2 tspcinnamon
  • 1/2 tspground ginger
  • 1/4 cupwalnuts coarsely chopped
  • 1egg beaten
  • 2ripe banana
  • 2carrots grated
  • 100 gmoil
  • 2 tbspbutter
  • 1 tspvanilla essence
  • 1 tbsplemon juice

Steps

  1. 1

    Preheat oven to 180 c and line a 20x10x7 cm loaf tin with graseproof paper

  2. 2

    Combine dry ingredients and nuts in a bowl set aside

  3. 3

    Place egg bananas carrots melted butter vanilla and lemon juice in a large bowl and mix until well combined

  4. 4

    Add wet ingredients to dry ingredients and stir until just combined

  5. 5

    Scrap into tin and smooth the surface with spatula Top with walnuts

    Bake for 50 minutes or until a skewer inserted in the centre comes out clean
