To activate the yeast, mix the sugar & yeast in a glass of warm water until dissolved

Next in a large mixing bowl add the flour, salt adding water gradually as needed until you achieve a soft non-sticky dough.

Cover & leave the dough in a warm place for 60 mins or until it doubles in size

Cut the dough into equal circular sized balls. Leave to rest again for 20 mins

Next roll the dough balls evenly until all are equally flattened; leave the dough for another 20 mins to rest

Finally using the filling of your choice, either the zaatar mix or the shredded cheese fill the centre. Bake in the oven at 180° for 12- 15 mins or until the dough is golden on the bottom and the topping is crunchy

Transfer to your choice of serving dish and serve hot.
