It couldn't be more delicious and certainly couldn't be more healthy.. This chicken recipe is power packed with the goodness of olive oil, freshness of coriander leaves and heat from black pepper.

Marinate the chicken with salt, black pepper, turmeric and lime juice for about 15-20 minutes

Make a paste, with onion, garlic, ginger and green chillies. We would also need a paste of fresh coriander leaves.

In a cooking wok/kadhai, slightly heat the olive oil on low to medium heat (make sure it is not very hot; olive oil should not be heated a lot). Add chopped onions, and the paste of onion-ginger-garlic. Once it starts browning, add the marinated chicken.

Cook the chicken thoroughly (add in sufficient water), and then add the coriander leaves paste, towards the end. Mix it through, and cover the lid. Let it cook another 5-6 minutes. The consistency of the gravy can be customized.

Turn off the heat, and give it a standing time of about 7-8 minutes. Serve it along side, steamed rice or roti.
