Steps

Peel, chop and wash the yam.

Put in a pot, add water and boil until cooked, done and soft.

Completely mash the cooked yam.

Add the grinded red bell pepper and onions and then seasonings to taste.

Set the mashed spiced smashed yam aside.

Break and beat the eggs into a bowl.

Put the flour and breadcrumbs into a bowl and mix with pinches of seasonings

Scoop up a little of the mashed yam using your hand and mould into a ball using your palm.

Add vegetable oil to a pan for deep frying and heat up the oil.

Dip the yam ball into the egg, coat it entirely with the egg and roll it into the mixture of flour and breadcrumbs.

Gently add the yam balls into the pan. Add it gently so the balls won’t come apart inside the pan.

Do this until all your mashed yam has been molded.

Also, don’t overcrowd the pan.

Fry the yam balls until they have browned to your liking, preferably light brown to golden brown.
