Prepare the pancake batter: In a bowl, add the oil and egg, and beat well. Add the mashed banana, then mix in the milk and pancake mix until smooth. Chop three strawberries and add them to the batter. Save the rest of the strawberries to serve with the pancakes.

Heat a skillet and grease it with butter. Grease the cookie cutters with butter, place them on the skillet, and fill with the batter. (I like to cover the skillet so the pancakes cook faster with the steam and don’t burn, but this is optional.) Once one side is cooked, flip the pancakes. When done, use a spatula to remove them and serve. Decorate as you like.

You can also use the smallest heart-shaped cutter to shape the strawberries. Enjoy!
