This is rich in protein. You can either cook with yolk or if you have cholesterol problem then make it with only egg white.
Steps

Finely chopped all the vegetables, onion and chillies. Separate out the yolk from egg white.

Now heat the oil in a pan and fry the chopped onion till it gets brown.

Then add all the vegetables and saute it till the vegetables become soft.

Now add egg white and salt. And saute it for a while.

When egg is fried well then garnish it with chopped coriander leaves. Now serve hot egg bhurji.
