Very Lemony, with no refined sugar!

Ingredients

  1. 500 gDiced Chicken
  2. 6Large Spring Onions
  3. 30 mlSunflower Oil
  4. 1/2Bulb Garlic
  5. 1 CupChicken Stock
  6. Zest 2 Lemons
  7. Juice of 4 Lemons
  8. 2 tbspSoy Sauce
  9. 1 tspCider Vinegar (or any white vinegar)
  10. 75 mlPure Natural Maple Syrup (or 16tbs Sugar/Alternative)
  11. 300 mlWater
  12. 4 tbspCornflour
  13. to tastePepper
  14. KnobButter

Steps

  1. 1

    Gently fry Chicken and Spring Onions in Oil

    Add Garlic, Stock, Lemon Zest, Lemon Juice, Soy Sauce, Vinegar & Maple Syrup (or sweetener of choice)

  3. 3

    Simmer on low heat for 5-10 mins.

  4. 4

    Mix together Cold Water and Cornflour, then add to simmering pan. Stir and remove from heat when thickened.

    Add Pepper to taste.

  6. 6

    Stir in a knob of butter to add shine.

  7. 7

    Serve with Rice or Noodles of choice (I always opt for Brown Rice varieties)

    For future recipes,you can adjust lemon, soy, syrup, pepper etc. according to your own taste!

    I don't eat sugar if I can help it but if eating sugar doesn't bother you, you can replace the Maple Syrup with around 200g sugar
