Aloo paratha

Boil the potatoes until cooked. Pour out the water and leave to cool. Mash it. Add the diced peppers, onions and seasonings and mix it together. Cut the atarugu (habanero) into tiny pieces, grind the fennel and coriander.

In a bowl, sieve flour, add some salt and maggi seasoning cube (if using the yeast, add some sugar to the flour). Pour in warm water and knead well until you get a soft dough that doesn't stick to the bowl.

Roll it to get a log-like shape and cut in the middle to get eqaul size. Cut the two in thw middle as well to get 4 equal dough and cut them the same way to get eight equal pieces.

Flatten it and Roll it with a rolling pin, scoop a table spoon of the potato into the flat dough, cover it and seal it. Place it on a hot pan, flip it and leave the other side to darken a little (i forgot to take a picture of this)

It is like Roti or flat bread stuffed with potatoes.
