In a pot, add oil and star anise, cinnamon sticks until oil get very hot and u can smell the spice aroma, pour in your carrot(sequeze the carrot excess water)

Stir in and fry the rice for good 15mins until carrot look fried and slightly not visible

Add your whisked egg white and mix, fry for another 5 min

Then add 7 cups of hot boiling water, cover it and allow it to cook, reduce heat to medium and let it cook

Add in your sliced pepper, fold it and turn off heat, cover with a lid and allow it to settle for 2min, then serve with any sauce of choice
