I often start planning what I'm cooking in the evening by thinking of one item I'd like to eat. At 5pm, I saw a bag of prawns and thought they looked good... I had some chorizo and half a head of broccoli to use up. This was a really easy dish with not a clove of garlic or drop of wine in sight!

Ingredients

35mins
3 or 4 servings
  • 150 graw prawns
  • Medium diced onion
  • 150 gShort grain rice
  • Halfa broccoli head cut into small florets
  • 100 gChorizo sliced into half cm chunks
  • cubeFish stock
  • Seasoned seaweed (available from Asian supermarkets)
  • Sautee pan with lid

  1. 1

    Gently fry the sliced chorizo until crispy. Take out and put to one side.

  2. 2

    Add the prawns to the pan and cook each side for a minute or so until the flesh changes to pink. Remove and keep to one side.

    Gently cook the onions in the remaining fat until soft.

    Add the rice into the pan. Stir for a minute or so then add part of the fish stock. Cook the rice like you would for risotto.

  5. 5

    Just 5 mins before the rice is ready add the broccoli and return the chorizo to the pan with lid on. Add more stock if necessary.

    After 3 minutes return the prawns to the pan, stir and cook with lid on for another 2 minutes. Add more stock if necessary.

  7. 7

    Serve with a good sprinkling of seasoned Korean seaweed.

Love good food and I discovered quite early on in life that the easiest way to eat well for less was to make it myself. I work full time during the day and have a family and dog to juggle too. Most of my meals are quick, easy to make and always using fresh ingredients. I cook all regions of food but my roots are Cantonese so the style features in many of my Asian dishes. I do a lot of fusion food too. Occasionally I'll indulge in the occasional posh instant noodles from Korea or Japan.
