For the Dough
Take Maida in a mixing bowl and add 1/2 Tsp Baking Powder, 2 tbsp sugar, 1 tbsp salt and mix with water.
The dough should be soft and sticky.
Add 1 cube butter and mix.
Cover the dough and let it rest for an hour. - 2
For the Filling
Take Boiled and Mashed Potatoes
Add chopped onions, chilli garlic paste, 1 Tsp dhania powder, 1 Tsp pepper powder, 1 tsp kasuri methi, 1/2 Tsp sanchar, 1 tsp red chilli powder, 1 tsp jeera Powder, 1 tsp amchur powder, salt, coriander and mix.
Add 1 tbsp maida and make the mixture a little dry. - 3
Take the resting dough and Splash Maida on Top and Knead.
Now spread the dough flat with fingers, spread butter on it and sprinkle maida on top.
Fold this dough into 3 equal parts.
Press and spread this folded dough again, spread butter and sprinkle maida on top.
Fold this into half and then divide the dough into equal parts to make kulcha. - 4
Roll Like stuff paratha and sprinkle water on top. Transfer the Kulcha to the iron tawa with the water side down, so the paratha sticks to the tawa.
Put methi leaves or sesame seeds on top and let it stick to the kulcha.
Now flip the entire tawa and let the Kulcha cook on the direct low flame of the gas till it is crisp.
Remove when done, apply butter and serve.
