Quick Cinnamon Rolls

Well I thought I would start cycling again after being holed up in my house and working from home these past couple of weeks. The fridge finally had enough of me and yelled "what the ef do you need now" so I knew it was time to get back on a healthy routine. Went on a morning ride, feeling good, looked at my watch and saw I was at 14.3 miles, then it happened. I smelled fresh cinnamon rolls as I passed someone's house. Trying to fight the urge, came home, made some coffee but my brain was like, pssst, remember that smell? So here I am, made a batch of cinnamon rolls and posted it. These came out really good and I made 15 with this batch. Well worth it.
Steps
- 1
Preheat oven to 425 degrees.
- 2
Combine flour, sugar, baking powder, baking soda and salt.
- 3
Mix in buttermilk, vanilla and melted butter. Knead to form the dough.
- 4
Use the rolling pin and roll out dough (sport I forgot to take picture and will add next time I make these).
- 5
For the filling: mix the brown sugar, white sugar, cinnamon, salt and melted butter. If the mixture is too hard, add a little more melted butter. It needs to be soft as you will be spreading this over the dough.
- 6
Well, that was quick, spread the filling over the dough. Make sure you get every inch of the dough.
- 7
Sprinkle the chopped/minced pecans over the dough.
- 8
Now roll the dough to form a long roll (like a play dough snake). Use a pastry cutter and cut roll into individual cinnamon rolls. I made 15 with this recipe.
- 9
Butter baking dish and line with cinnamon rolls. Top cinnamon rolls with a little more filling mixture.
- 10
Bake at 425 degrees for 20-25 minutes.
- 11
While the cinnamon rolls are baking, make the frosting. I used a hand mixer and mixed the powder sugar, heavy whipping cream and cream cheese for about 5 minutes until smooth and creamy.
- 12
Once cinnamon rolls are done, put a small dab of the filling mixture on top allowing it to melt for about a minute or so. Top with the cream cheese frosting and enjoy.
