Ingredients

5 servings
  • 7large potatoes
  • 200 gplain flour
  • 200 gbhajia flour
  • 200 mlwater
  • 1medium sized onion, finely chopped
  • 1 bunchparsley, finely chopped
  • 3chilli, finely chopped
  • 1 TbspDhana Jeera
  • 1 Tbspfresh curry leaves (optional)
  • 2 packetsEno or 2Tbsps of cornstarch (optional) for a crunch
  • to tasteSalt
  • Oil for frying

Steps

  1. 1

    Peal and cut the tomatoes into cubes. Boil in salty water until slightly tender.

  2. 2

    In a bowl, mix the rest of the ingredients into a paste. The paste shouldn't be too thick or too light.

    Heat the oil in a frying pan on medium heat. Deep the potatoes into the paste, coating the whole potato and fry until light brown

  4. 4

    Serve with a lettuce salad or coconut/tamarind chutney
