Causa rellena is an iconic Peruvian recipe that combines mashed potatoes with lime and a flavorful filling of tuna, chicken, seafood, or avocado. There are many delicious variations.

Cook the potatoes in salted water. While still warm, peel them and mash using a potato masher. Knead and season with salt, pepper, oil, yellow chili pepper, and lime juice until you have a smooth dough.

In a separate bowl, mix the carrots and peas with mayonnaise, and do the same with the tuna chunks. Place plastic wrap on your work surface. Spread the potato mixture on top (as if making a roll), then spread the tuna with mayonnaise over it, leaving a 3/4-inch (2 cm) border around the edges.

Top with avocado slices, season with salt and a few drops of lime juice, and add the carrot and pea mixture with mayonnaise. Lift one edge of the plastic wrap and carefully roll up the causa.

Transfer to a serving platter with the seam side down. Remove the plastic wrap and decorate with sliced eggs and olives.
