Mint Lacchha Parantha

The above recipe resembles the flavour of pudina parantha served in the famous Paranthe wali gali in Chandni Chowk. It is a non-fried version and extremely tasty. Delhi 6 food lovers will very well understand what I am talking about

Steps
- 1
Knead the medium soft dough with wheat flour, 2 tbsp ghee, mint leaves and 1/2 tsp salt. Use warm water little by little to knead the dough nicely.
- 2
Cover the dough and let it rest for a minimum of 30 minutes.
- 3
Meanwhile, let's prepare masala paste. In a bowl, take ghee. Add all dry spices- mint powder, amla powder, dry mango powder, Kashmiri chilli mirch, salt. Mix everything nicely until smooth.
- 4
Now uncover the dough and knead a little more to smooth out everything and then divide the dough into a little bit big sized balls.
- 5
Now take 1 ball and roll out round as a normal chapati. Thickness should be exactly like a normal chapati.
- 6
Now spread the masala paste generously on it and roll like a paper fan as shown while pressing gently on each fold. Brush again with masala paste, the inside layer.
- 7
Now roll carefully from right to left as shown securing the end tightly so that the layers don't break.
- 8
Dust with dry flour and gently roll like a Chapati and cook like normal parantha with ghee on one side and masala paste on others.
- 9
Top it up with white butter and serve hot with kele ki Chutney, meetha tamatar and aloo ki sabzi. Watch the video if you wish to see.
