Ingredients

8 servings
  1. 4 Cupsuncooked elbow macaroni
  2. 1 Cupham, diced
  3. 1 Cupcelery stalks, sliced
  4. 1/2 Cupgreen onion, chopped
  5. 1/4 Cupsweet pickle relish (substitute lemon juice or ACV)
  6. 1 Jar (2 oz)diced pimientos, drained
  7. 4eggs, hard-boiled, sliced
  8. Dressing mixture
  9. 1 Cupsalad dressing or mayonnaise
  10. 2 TBSyellow mustard
  11. 1/2 TSPsalt
  12. 1/4 TSPblack pepper, ground

Cooking Instructions

  1. 1

    Cook and drain macaroni as directed on package. Rinse with cold water, drain well and refrigerate for 1 hour.

    In large mixing bowl, add macaroni, ham, celery, onion, pickle relish, and pimientos

  3. 3

    In a different bowl mix mayonnaise, mustard, salt, pepper.

  4. 4

    Add noodles to sauce/dressing. Gently stir in sliced boiled eggs. Cover and refrigerate overnight.
