Whole Wheat Oat and Coconut Cookies

Nací en Jaén pero llevo ya 30 años en Madrid (España)

A friend gave me a cookie book a few months ago, and I hadn't tried any of the wonderful recipes in it yet. So today, since I already had lunch prepared, I decided to make these simple and, in my opinion, delicious cookies. I made them a bit large on purpose; next time, I'll try a different size. They're healthy and delicious to enjoy with tea. I forgot to mention that while they were baking, the aroma in the kitchen was so intense it filled the room. I stored them in a beautiful box that Rosa, a good coworker, gave to my son Francisco, although I fear they won't last long (my husband is already enjoying them). Here's a photo of the same cookies, made smaller and with wheat flour, which my son took to his coworkers, and according to him, they really liked them.

Ingredients

15 minutes
6 servings
  1. 3 cupsrolled oats
  2. 1 cupself-rising flour (I used whole wheat)
  3. 1 cupshredded coconut
  4. 1 cupoil (I used corn oil)
  5. 1 cupsugar (I used brown cane sugar)
  6. 1 cupmilk
  7. 2eggs
  8. 1 tbspcinnamon
  9. 1/2 tspbaking soda
  10. Raisins and walnuts (add as much as you like. I roughly chopped the walnuts)
  11. Cranberries (not in the original recipe, I added them)
  12. 1/2 tspsalt
  13. sheetButter or oil to grease the baking
  14. sheetFlour to dust the baking

Steps

  1. 1

    Preheat the oven to 250°F (I used 285°F).

  2. 2

    In a bowl, mix all the dry ingredients and make a well in the center to add the eggs, oil, and milk.

    Grease a baking sheet and dust it with flour. Drop spoonfuls of the cookie dough onto the sheet, leaving enough space between them so they don't stick together while baking (I chose to make them quite large).

    Place the sheet in the oven for about 20 minutes or until they are golden brown to your liking.
