To make Mutton Nihari, heat ghee in a heavy-bottomed pot.

Once the ghee is hot, add the onions and sauté until golden brown.

Add the mutton, ginger paste, garlic paste, coriander powder, turmeric, and salt. Mix well.

Add the nihari masala and cook, stirring, for 5 minutes.

After mixing well, add water and stir. Cover the pot and cook on low heat for 4 hours.

Check occasionally to see if the mutton is cooked. If it cooks faster, proceed to the next step.

Once the mutton is tender, mix the flour with 1/2 cup water to make a thin slurry.

Add the flour slurry to the mutton gravy and mix well.

Simmer on low heat for 15 minutes, or until the gravy thickens.

Finally, garnish the nihari with lemon juice, cilantro, and julienned ginger.

Serve the prepared Mutton Nihari with roti.
