For making puris : Add wheat flour, semolina and gram flour in a mixing bowl. Add carrom seeds and salt. Add cooking oil for moyan and mix all ingredients well. Now knead a soft dough with the help of water. Keep aside for 15 minutes.

After 15 minutes knead it again for 2 minutes. Now take a portion of dough and make a ball. Roll it.

Heat cooking oil in a karahi and put puris and deep fry till golden. Flip the side and fry from other side also. Likewise make all the puris.

Alur Bhaji: cut pieces of potatoes. Grate ginger and tomatoes.

Heat oil in a separate pan. Add cumin seeds and when cumin seeds splutter put ginger and tomato paste into the karahi and cook for 5 minutes on low flame. Add salt, red chilli powder, turmeric powder and garam masala and mix well and saute for 2 minutes. Now Add potatoes and mix well and cook for 5 minutes on low flame till oil leaves the karahi. Garnish with coriander leaves.

Serve puris and Alur bhaji with salad and mint chutney.
