Peppermint Crunch Truffles

Place the cookies in a blender with the dairy free cream cheese and mint extract
Blend until it forms a soft cookie dough like consistency
Roll into 10 small balls
Chill in the freezer for 10 minutes - 2
Melt the dairy free dark chocolate and then dip each of the truffles in
Remove them with a fork and place on a piece of parchment paper
Return to the freezer for 10 minutes
Melt the dairy free white chocolate and drizzle over the truffles
