Rajgira flour is a highly nutritious plant protein . It is a super food , naturally naturally gluten - free , boosts digestion, helps in anemia, helps in strengthening bones etc .It is widely used for fasts when items like savory pancakes, sheera , soft rotis , puris & bhakri are made from it . As it lacks elasticity when used on its own , other flours have to be mixed with it to make delicious & wholesome recipes.

Tips

1) These puris with a dollop of Shrikhand was our favourite after school snack .
2) Always use ghee for moin to make the puris crispy.
3) Fry the puris on slow flame for best results.
4)Knead the dough.very well & re - use the cut out dough to make more puris .
5) These puris tastes good on it's own also as masalas are added in it .
6)Puris without masala can also be made & they taste equally good.
