Ingredients

  1. For the marinade
  2. Chicken (boneless)
  3. 2 tspcurd
  4. Pinchsalt
  5. 1/4 tspred chilli powder
  6. 1/8 tspturmeric
  7. 1/4 tspgaram masala
  8. 1/4 tspkasuri methi
  9. 1/2 tspginger-garlic paste
  10. 1 tspoil
  11. For the gravy
  12. 1 tspoil
  13. 1 tbspcashew nuts
  14. 1/2medium onion, roughly chopped
  15. 1medium tomato, roughly chopped
  16. 1/2 tspginger-garlic paste
  17. For finishing the sabzi
  18. 1/2 tbspbutter
  19. 1/4 tspcumin seeds
  20. 1-2cloves
  21. 1-2cardamom
  22. 1/4" cinnamon
  23. 1green chilli slits
  24. 1/4 tspred chilli powder
  25. 1/2 tspcumin-coriander powder
  26. 1/2 tbspsugar/tomato ketchup
  27. 1/2 tspsalt (to taste)
  28. 1/4 tspgaram masala
  29. 1/4 tspkasuri methi
  30. 1 tbspcream (or butter and milk)

Cooking Instructions

    Mix all the ingredients (except chicken) for the marinade in a bowl. Taste it, adjust flavour if needed.

    Add chicken and coat it in the marinade fully. Let it rest for few hours (1-2 hours at least).

    Grill the chicken on stove top with butter.

  4. 4

    For the gravy, add oil to a pan.

  5. 5

    Add cashew nuts and roast till they are light brown.

  6. 6

    Add onions and cook till translucent.

  7. 7

    Add the ginger-garlic paste and cook till the raw smell fades.

    Add the tomatoes and cook till oil separates/gets mushy.

    Let it cool down and then blend to a paste.

    To finish the sabzi, add butter to a pan.

    Add the whole spices (cumin, cinnamon, cardamom, clove) and cook till it sizzles.

    Add onions, ginger-garlic paste and green chilli slits and cook.

    Add tomato ketchup/sugar and all the dry spices except garam masala and kasuri methi.

    Mix well and let it cook for 2-3 min.

    Add cream (or butter and milk) and mix well.

    Add kasuri methi and garam masala.

  17. 17

    Add the chicken pieces and cook for a minute.

    Serve hot with rice/paratha/naan!
