Spring Roasted Veggie Casserole
Growing up our home was always filled with all sorts of delicious smells when my mom was cooking, but this specific dish was truly one of my top favorites. Such a delicious combination of veggies that I am sure everyone will enjoy eating. I was tempted to add Spinach and Mushrooms, but I thought I would save it for a delicious recipe that I have in mind for later on. 🙂 When I first started blogging this was one of the first recipes I posted with far less ingredients, because I wasn’t actually sure what to do and how to do it back then, but now I feel a bit more at ease and so I tried it out again. 🙂 (working on taking photos helped me but I do still have a long way to go)So, I do love to add peppers into most of the veggies recipes that I make…I like how colorful the dish looks and the taste is sometimes just a bit sweeter depending of course on which peppers you will be using. 🙂 In this recipe most add garlic, and since I am the only one who does not eat garlic, I make two batches so that all can be satisfied. 🙂A Spring and Summer delight for anyone who loves veggies and just wants to eat something

Pochero (Beef Stewpot)
Majority of the time I spent on slowly cooking the beef on medium heat to make it really . The rest will just take about 12-20 minutes max. With the Spanish influence in the Philippines, we have our own version of Pochero using local and easily available ingredients. The basic component of a Pochero is a tender beef stew with some green leafy veges. Many households add in thier favorite vegetable like chick peas, squash and cabages. Some even ad sausages (chorizo) to their soup.Pochero soup are not limited to beef, it could be pork or chiken or mix.Pochero is the soup that everyone can enjoy.

Green 3 Juice
In this version of green juice, we add ginger to spice things up. The sweetness of the apple, the tart kick of lemon, and the health benefits of ginger combines really well. Green 3 is slightly sweeter than Green 1.Makes 1-2 (16-ounce) servingsThis is a recipe from Pressed Juicery.

Pressed Barley, Tomato and Bean Stew
I came up with this recipe after deciding that I need to go on a diet.Since all you need to do is simmer, it doesn't take much effort, which is perfect for me.I figured that adding the pressed barley would help you get your daily dose of fibre. This soup is 100 % vegetarian. It also tastes amazing with ginger and/or garlic. If you're not dieting and aren't vegetarian, then add a bit of sausage or ham.Ad ginger or garlic to boost the taste. If you're on a diet, eat this as your only meal for dinner.
