The sauce in this casserole was really flavoursome and even my mushroom hating son asked for a bit extra to dunk bread with. Just perfect for those broad beans and for the first onions of the season

The sauce in this casserole was really flavoursome and even my mushroom hating son asked for a bit extra to dunk bread with. Just perfect for those broad beans and for the first onions of the season

Coat chicken with flour after seasoning

Heat oil in a large pan and brown chicken until nearly cooked
- 3
Remove chicken from pan, lower the heat and sweat the onion until translucent. Add the sliced carrot

Cover wild mushrooms with boiling water and add a chicken stock cube, leave to soak for 20 minutes

When onion cooked add soaking liquid/stock and simmer a few minutes to cook onion and carrot.

Return chicken to pan, add mushrooms, frozen broad beans, piquillo peppers and a bit more water if needed. Cover and let simmer until cooked through
