Ingredients

30 minutes
3 Servings
  1. 500 gboiled cassava
  2. 3 clovesgarlic, diced
  3. 2large tomatoes, diced
  4. 1medium size onion, thinly sliced
  5. 2green onions, thinly sliced
  6. 1 tablespoonparsley, finely chopped
  7. 1red/green pepper, finely chopped seeds removed (skip if you don't have or sub for a pinch of cayenne pepper)
  8. 2 tablespoonscoconut oil or other oil for cooking
  9. 1/3 cupcoconut milk/ cream (optional)

Steps

30 minutes
  1. 1

    Add coconut oil to a skillet, frying pan or cooking pot on high heat

  2. 2

    When coconut oil comes up to temperature add the sliced onions and sauté until the onion is a little brown. Then add the tomatoes and other fresh herbs.

  3. 3

    Continue to sauté until the tomatoes are soft then add the cassava. Add the remaining salt,black pepper and coconut milk and sauté for 3 minutes or so on high heat.

  4. 4

    Finally remove from the heat and serve😊
