Dough preparation:- Take a bowl and add maida and salt and mix it well.

Then add 2-3 tbsp of oil..and add water and knead it.

Now dough is ready..cover it and keep it aside.

For stuffing :- Take boiled potatoes and mash it.

Now turn on the flame, heat a pan and add oil..let the oil heat properly.

Then add green chilli and grated ginger and garlic...and fry it for a minute on medium flame.

Add green peas and fry it for a minute on medium flame.

Now add turmeric, chilli powder, garam masala and salt as per taste..mix it and cook it for few minutes.

Add potato..mix it well on low flame.

Now turn off the flame and keep it aside.

Now take the dough..knead it once again.

Make equal size balls to make samosa.

Now take one dough ball dust it in a flour

Roll it into small chapati..and cut in middle with a knife in a equal parts.

Now take one part and fold..and make it like a cone shape.

And then fill it with a prepared stuffing..and close the edges.

Repeat the process with a the samosas.

Now turn on the flame and heat oil in a pan.

Now put samosas one by one in oil...fry it on a low flame.

After 2 minutes flip it..keep fliping in between.

Fry it on a low flame till it turns golden brown on both sides.

Once the samosa are fried properly take it out.

Then serve it with sauce or chutney.
