This is my first time making this, and it turned out really well. The best part is that everyone at home loved it.

In a bowl, add the ghee and ice cubes. Whip the ghee until it becomes creamy. Add the all-purpose flour and mix well. Then add the chickpea flour and mix everything together.

Gradually add water, mixing to avoid lumps, until you have a thin batter. Add 1 tablespoon lemon juice and refrigerate the batter for 10 minutes.

To make the sugar syrup: In a saucepan, combine the sugar and 1/2 cup water (about 120 ml). Bring to a boil and cook until you have a thin syrup. The syrup is ready.

To fry the ghevar: Pour ghee into a deep, heavy-bottomed pan and heat it on high. Once the ghee is hot, pour a spoonful of the batter into the center. When bubbles rise and subside, add another spoonful. Repeat this process about 10 times, shaping the center with a rolling pin or stick as needed.

Prepare all ghevar this way. Place a ghevar on a plate, drizzle with a spoonful of sugar syrup, then top with rabdi. Garnish with chopped cashews and almonds. Your ghevar is ready to serve.
