Steps

Firstly, boil water, add salt, bay leaf, cloves, cinnamon stick. Add rice(soaked for 30 mins) and let it boil.

Once it’s boiled, strain it and keep it for cooling/drying.

In a kadhai, heat ghee add onion paste, ginger garlic paste, turmeric powder and chilli powder. Sauté it.

Then add the potatoes and soya chunks and sauté it well.

Once this is done, add the tomato purée and salt to taste. Once the tomatoes are cooked well, add all the dry spices, dash of sugar and water and cook the gravy.

As soon as you get the gravy consistency, divide it into two parts. Transfer the first part into a separate bowl and keep the remaining in the Kadhai.

Layering: Add rice above the gravy then add the fried onions, cashew, raisin, mint leaves, colouring/kesar and again add second layer of rice and follow the same procedure.

Once you reach the final layer. Add 1 tbsp ghee again after the garnishing and cover it with an aluminium foil and cover the Kadhai with it's lid.

Lower the flame and cook it for 10 minutes and your biryani is ready.

Serve it with some papad and raita. Enjoy ♥️
