It is a delicacy from the southern part of Gujarat which is made during the festival of Randhan Chhath. Randhan means cooking so on this day so many things are cooked and the next day which is Sitla Satam, all these cooked food eaten cold the whole day. Khata vada is made out of wheat flour and jowar/sorghum flour added with curd and spices. The batter ferments for 6 - 8 hours so it gets this sour taste and that is why it is called Khata vada

Ingredients

4 servings
  • 1 cupCoarse wheat flour
  • 1 cupcoarse sorghum flour
  • 2 tbspcurd
  • 1/2 tbspfenugreek seeds
  • 1 tspginger paste
  • 1 tspgreen chilli paste
  • 1 tspsesame seeds
  • 1/2 tspturmeric powder
  • To taste Salt
  • As required Oil to fry

Steps

8hr + 30 min
  1. 1

    Take wheat flour and sorghum flour and mix it well. If you don't find coarsely ground flour then you can add some semolina to the flours. Roast fenugreek seeds until dark brown. Let it cool down and make a powder out of it. Add this powder to the flour mixture. Add curd along with water to make a thick paste and mix everything well. Let it ferment for 6 to 8 hours.

    Add ginger paste, green chilli paste, sesame seeds, turmeric powder and salt to the batter and mix everything very well.

    Heat oil on high heat. Take 3 tablespoons of hot oil and add it to the batter and mix it well. Now make vadas out of the batter and fry it until brown in colour.

    Khata vada can be eaten on it's own and they are delicious even when they are cold.
