I would like to give some tips on how to remove the sand from chanterelles. Soak the chanterelles overnight or at least for a few hours in salty cold water, then the pores of the mushrooms will open and all the sand will remain at the bottom.
And you can also pour boiling water over the chanterelles for 10-15 minutes, and boil them in boiling water for 5 minutes. Then rinse under cold water. And they are ready to cook. They must be cleaned, otherwise you will eat sand🙃

Bring salted water to a boil and cook tagliatelle. Reserve 100 ml of pasta water for the sauce.

Peel and dice onion and garlic. Finely chop the leaves of parsley. Dice the bacon.

Heat some oil in a big pan and fry chanterelle for 5 min. Add garlic, onion and bacon. Fry for 3-4 min.

Deglaze with white wine and let simmer for 5 min. Add reserved pasta water, butter and mascarpone cheese and stir to combine.

Add cooked pasta, parsley and freshly grated lemon zest. Season with salt and paper. Enjoy!
