This one of the traditional recipe of South Gujarat. In this dish there is no cooking process, hence it is called kaachu ( means raw in Gujarati). Have just used boiled potatoes and have marinated it in finely chopped green garlic. Many of them make this kaachu by smashing it with the green garlic but when you marinate potatoes in the green garlic the taste is awesome. Do try making kaachu this way. You can make it with fresh homemade paneer in the same way.
