Ingredients

  • 1 3/4 cupssugar
  • 4large eggs
  • 1 3/4 cupsvegetable oil
  • 1 teaspoonvanilla extract
  • 2 3/4 cupsall purpose flour
  • 3 teaspoonbaking powder
  • 8-10large pieces of carrots(finely grated)

Steps

  1. 1

    Whisk together sugar, eggs, vanilla extract, and oil until thick.

  2. 2

    Then add in flour, baking powder, and cinnamon and mix gently

  3. 3

    Lastly, add in the grated carrots and raisins and mix in until well combined.

  4. 4

    Grease in your pan & Pour mixture into tins and place in the oven at (170°C) for 70- 80 minutes (or until a skewer comes out clean).

  5. 5

    Leave to cool in pan for 10mins then turn onto a cooling rack. enjoy
