Fluffy Focaccia 🫓

This is a simple recipe for the classic focaccia, a fan-favourite of the almighty Italian cuisine. Add olives, tomatoes, cheese, onions, figs - your only limit is your imagination.

This is a simple recipe for the classic focaccia, a fan-favourite of the almighty Italian cuisine. Add olives, tomatoes, cheese, onions, figs - your only limit is your imagination.

Add the yeast in the water until fully dissolved.

In a bowl, add the bread flour and create a well for the yeast-water mixture. Pour the mixture and mix.

Add the olive oil and salt and incorporate fully into the dough.

Cover and let the dough rest for 30 minutes.

After resting, wet your hands with clean water* and grab each of the four sides of the dough and fold them into the centre.
*Soak your hands between each fold to prevent dough from sticking.

Lift the dough entirely and drop it into the bowl a couple of times.

Repeat steps 4-6 one more time.

Grease a baking tray generously with olive oil and transfer the dough into the tray. Grease and massage the dough with another 1-2 tbsps of olive oil again.

Using your fingers, spread the dough to cover as much of the tray as possible. Cover and let rest for 30 minutes.

Preheat the oven to 230°C.
In the meantime, spread another tbsp of olive oil onto the dough before creating dimples into the focaccia with your fingers (until you feel the bottom of the tray!)

Sprinkle some water, rosemary and coarse salt on top of the dough.

Bake at 230°C for 20 minutes. Enjoy!
