Odisha's Delight - "Muga Rasa bara"

The Odia word " Rasa" means "Juice", "relish" ,"Flavour" or "Savour". Rasa refers to the taste of something. Rasabara is around 700years old and is associated with the belief and traditions of Western Odisha inhabitants. These are widely consumed in Odisha. It is very juicy and soft in taste and made from "Yellow Moong Dal" paste. This bara/vada are fried and then soaked into the cardamom flavoured " Jaggery/Sugar syrup ". It's a mouth melting sweet.

Ingredients

5 hours
7-8 servings
  • 1&1/2 cup Moong Dal
  • 2 tbspUrad Dal
  • PinchSalt
  • 1/4 tspBaking Powder
  • 1/2 CupOil
  • For Sugar Syrup:
  • 1 CupSugar
  • 1&1/2 cup Water
  • 3-4Cardamom pods
  • 1/4 tspKesar/Saffron

Steps

    Wash and soak moong dal and urad dal for 4-5 hours.

    Then make a fine paste, make a thick paste not runny.

  3. 3

    Keep it aside for 10 mins.

  4. 4

    Add a pinch of salt and baking powder and whisk again nicely.

  5. 5

    In a vessel, add sugar, water, saffron, and crushed cardamom pods & heat it until all sugar melts. Don't make the sugar syrup thick, as the Muga rasa bara won't soak the sugar syrup.

  6. 6

    Keep the sugar syrup aside. Add oil in a kadhai and add oil to it. Keep it in low-medium heat.

  7. 7

    Dip you fingers in water. Take a small portion of this batter to your fingers, then drop in the hot oil. Before sliding the bara to the oil, ensure it's hot enough. To check, drop a small portion of batter to it. The batter must rise without browning. This is the right temperature.

    Cook the bara for 2-3 minutes and then tranfer it into the hot sugar syrup.

    Let the bara soak the sugar syrup. And Enjoy it once cool.
