  • 250 gself-rising flour
  • 4eggs
  • 30 gcrystalline sugar
  • 1 package (8 g)vanilla sugar
  • 1 pinchsalt
  • 700 mlmilk
  • 2 (15 g)tablespoons butter (for the batter)

    Sift the flour in a large bowl, add the sugar and the vanilla sugar. And make a simple in the middle.

    Separate the egg-white from the yolks, add the yolk in the simple of the flour, and the egg-white in another bowl for whisking.

    Melt the butter and add it to the batter ingredients.

    Add about half of the milk to the batter ingredients, and mix thoroughly with a hand-whisk until you have a smooth batter. Then mix in the rest of the milk.

    Whisk the egg-white near stiff, and mix it into the batter.

    Cover the batter, and put it in the fridge to let it rest for 30 minutes.

    Heat the pan, smear it with butter only once before heatin

    Smear the pan with butter only once before heating it.

    Heat the pan (5 out of 6) till the butter. The first one or two pancakes seldomly are a success because the pan has not heated evenly yet. Keep trying, lower the heat to 4 out of 6 after the first successful pancake.
