Frijoles de la Olla, Fried and Refried Beans

Pick through the beans to remove any stones and rinse them well.

For 2 1/4 pounds of beans, add 6 quarts of water (about 5.7 liters).

Once the water comes to a boil, cook for 2 hours and 30 minutes.

Add 1 1/2 tablespoons salt (about 25 grams).

At this point, you have beans ready to eat, but if you want them fried, continue with the recipe!

In a pot, add lard or oil. When hot, add the 1/4 onion.

Once the onion is golden, remove it from the pot.

Blend the onion, chipotle peppers, and a little water in a blender until smooth.

Add the blended chipotle mixture to the hot lard and bring to a boil.

When it boils, add the beans and cover the pot.

Once it boils again, mash the beans in a circular motion. Now you have another style of beans—let's move on to refried beans.

To make refried beans, just add more lard to the pot, let it heat up, and return the fried beans to the pot.
