Ingredients

  1. 16-6 inchtortillas
  2. 2 cupsshredded chicken
  3. 1 cuppico de gallo
  4. 2 cupsspinach leaves
  5. 1 cupshredded mozzarella cheese
  6. 1 tbsp.oregano
  7. 1/2 tsp.salt (for chicken)
  8. 1/2 tsp.pepper (for chicken)
  9. 1 cupshredded sharp cheddar cheese
  10. 1/2 cupenchilada sauce
  11. 1 cupsour cream
  12. 1 tbspbutter

Cooking Instructions

    Butter the bottom of 8 tortilla shells and put them in a baking pan.

    Spread the pico de gallo on the tortilla shells.

  3. 3

    Sprinkle salt and pepper on the shredded chicken, and then spread it over the pico de gallo.

    Spread the spinach leaves over the chicken.

  5. 5

    Sprinkle the mozzarella cheese on top of the spinach leaves.

  6. 6

    Sprinkle the oregano over the mozzarella cheese to add some spice.

  7. 7

    Cover each spinach chicken tortilla with another tortilla shell.

    Sprinkle cheddar cheese over each tortilla shell.

  9. 9

    Cook in oven for 15 minutes at 375°.

    Cut into quarters and serve with sour cream and enchilada sauce on the side.
