Ingredients

3 hours
10 servings
  • 1Rotisserie Chicken shredded... I discarded the skin
  • 28 ozcrushed tomatoes (1 large can)
  • 210 ounce cans of enchilada sauce
  • 2medium onions chopped or 2 teaspoons onion powder
  • 8 ozchopped green chilies
  • 2cloves minced garlic
  • 214.5 ounce cans of chicken broth
  • 2 tspground cumin
  • 2 tspchili powder
  • 2 tspsalt
  • 1/2 tspground black pepper
  • 2bay leaves
  • 20 ozfrozen corn
  • 2 tbspchopped cilantro
  • 1Optional Garnishes- avocado, shredded cheese, sour cream, lime, and tortilla chips (broken into pieces)

Steps

  1. 1

    Add all ingredients to slow cooker and stir.

  2. 2

    Cool on low 6 to 8 hours or on high 3 to 4 hours.

  3. 3

    Taste soup about an hour before done and if it tastes too strong add water and continue cooking.

    Garnish as desired.
