Ingredients

1 hr (prep to dish)
6-8 people
  • 2 CupsMaida (All- purpose flour)
  • 2Eggs (Large)
  • 1/4 tspSalt
  • 1/4 tspCinnamon Powder
  • 1.5 tbspsBaking Powder
  • 1/2 CupVeg Oil
  • 2/3 CupSugar
  • 1 tspOrange Zest/Rinds
  • 1/4 CupFresh Orange Juice
  • 1Orange Cut into thin Roundels (For the Layering)

Steps

1 hr (prep to dish)
  1. 1

    In a large mixing bowl: Add in the Eggs & Sugar & whisk well until both are combined evenly

    Prepare the baking pan by lining it up with the parchment paper, grease it well & set aside for the time being

    In the same mixing bowl: Add in the Orange Rinds, Juice & whisk well together until well incorporated

    Now, add in the Dry Ingredients by sifting it into the same & mix everything together again to form a smooth mixture/batter

    The batter should be fluffy enough- Now, layer the Baking Pan, with the Slices Oranges (Thin Roundels) & then, pour in the cake batter to it & spread it evenly

    Bake it in a preheated oven at 180C for about 35-45 mins time (Time may differ, due to different oven temperature settings): Mine was ready within 35 mins time

    Allow it to cool down within the oven itself after turning it off & then very carefully de-mould it on a plate & then, very gently flip It over to the cooling rack- to cool down completely

    Garnish: With some Castor Sugar sprinkled on its top & RELISH.YOUR SPONGY ORANGE CAKE
