Nei Payasam Kerala Style

Nei Payasam or sharkara payasam is a special traditional payasam usually served as naivedyam in kerala temples.

Steps

1/2 cup raw rice/unakkalari

Rinse the rice and convert into a pressure cooker, add 2 cups of water.

Make jaggery syrup, take 1 cup Jaggery add 1/2 cup water, after that strain the jaggery syrup and keep it aside.

Pressure cook rice until 3-4 whistles(depends on the rice you are using). The rice must not be cooked until mushy.

Convert the cooked rice into a pan, add the jaggery syrup into it and cook until the jaggery syrup blends with rice well.

Add 1/4 cup grated coconut, mix well cook for 2 min on low flame.

Add the cardamom, dry ginger, cumin seeds powder. 1 TSP.

Add 1&1/2 tbsp ghee into the rice and mix well. Switch off the flame. The rice will be in a thick consistency.

Add roasted cashews into the rice and mix well.

Serve the payasam hot or warm
