Benefits of malabar spinach -
Malabar spinach is high in Vitamin A (100 grams contains roughly 8,000 units), Vitamin C, iron, and calcium. It has a high amount of protein for a plant and is also a good source of magnesium, phosphorus, and potassium.

Another good reason to eat malabar spinach is that it has a good amount of antioxidants, particularly beta carotene and lutein, those naturally occurring chemicals that help keep your cells from aging. Rubra seems to be slightly higher in antioxidants

No sugar, no maida and no corn flour.

Ingredients

4 servings
  • 20 leavesmalabar spinach
  • 1sweet potato
  • 1 spoonginger garlic paste
  • Chopped veggies
  • 2 spoonsonion
  • 2 spoonscapsicum
  • 2 spoonsCarrot
  • 2 spoonsGreen beans
  • 3 spoonsCabbage
  • 2 spoonsCoriander leaves
  • 2 spoonsLemon juice
  • 6Curry Leaves
  • 1 spoonGreen chilli sauce
  • 1-2 spoonspepper powder
  • to tasteSalt
  • 1/2 spoonJaggery
  • 1 spoonbutter
  • 3 spoonfresh cream

Steps

15 minutes
  1. 1

    Keep ready ingredients. Take a cooker, add malabar spinach, sweet potato and add three cups of water, close the lid and cook them
    Let it cool and then nicely grind them.

    Heat the kadai,add butter or oil.
    Add ginger and garlic and little fry them
    Add onion and mix nicely and fry them
    Add capsicum,beans, carrot, cabbage, green chilli sauce & salt and mix nicely.
    And add two cups water and let it boil nicely.
    Add grinded mixture and mix.

    Pour it into serving bowls and add some fresh cream
    Serve with papad and Crispy Noodles.

    Instead of malabar spinach and sweet potato you can use spinach and potatoes.
