Throw It Together pasta 2.0

My aim for January is to reduced the amount of food we waste in our house as we do end up throwing away a lot of unused food so I came up with this by simply mixing a bunch of random ingredients from my fridge together that needed to be used up. I've linked the recipes in the ingredients for the the chilli con carne and pico de gallo.

With the pico de gallo, it was intended to be used as pico de gallo but I got distracted and ended up blitzing it to the point it was simply mush so I froze it until I could think of something to use it in.

There was perhaps a small bowl sized portion of chilli con carne which I added into the pasta last minute. It actually turn quite good for a random mixture of ingredients and leftovers.

Ingredients

  • Pico de gallo, blended to a paste
    Pico De Gallo
  • 1small tub of chilli con carne
    Chilli on a Budget
  • 350 gchestnut mushrooms, sliced
  • 2-3 slicesbacon, chopped roughly
  • 1/2onion, thinly sliced
  • 250 gspiral pasta
  • 1 packcooked sliced chicken pieces
  • as neededGrated cheese

Steps

    Cook pasta according to packet instructions. Drain well once cooked and return to the saucepan.

  2. 2

    In the meantime, cook the mushrooms with a drizzle of olive and seasoned with salt over medium low heat for 15-20 minutes.

  3. 3

    Fry the onions in until soft then set aside and using same pan fry the bacon. Add both to the pasta.

  4. 4

    Add the pico de gallo to a saucepan and simmer down until it has thickened then add chicken to heat through and the remaining of the chilli, cook all together until its heat through.

  5. 5

    Add the sauce to the pasta and mix to coat evenly.

  6. 6

    Serve immediately with grated cheese over pasta.
