Egg-free Simple Sweet Potato Pound Cake

I had lots of sweet potatoes, so I made a cake which my son, who is allergic to eggs, could enjoy.

Black sesame seeds might give a more attractive finish, but I only had white sesame seeds, so if that's what you have too, it will look like the top photo.
It has a very mild sweetness, so add some sugar or sweet cream if you'd prefer it to be a little sweeter. Recipe by Harapeko tarou

Ingredients

8 servings
  • 200 gramsSweet potato
  • 100 gramsPancake mix
  • 50 gramsButter or margarine
  • 100 gramsMilk or soy milk
  • 1Sesame seeds (optional)

Steps

  1. 1

    Microwave the unpeeled sweet potato until soft. (The peel acts as a substitute for plastic wrap.)

  2. 2

    Peel the sweet potato and mash while still hot. (Start to preheat the oven to 180°C.)

  3. 3

    Add the butter (margarine) to the sweet potato and mix.

  4. 4

    Mix in the pancake mix and milk (or soy milk), then pour the batter into the tin. Bake in the oven for 20-30 minutes. Keep an eye on it while it is baking.

  5. 5

    Poke a toothpick through the middle. It is done if the toothpick comes out clean It's tasty served with heavy whipped cream.
