Low Sugar & Gluten-Free Soy Flour Waffles

I was wondering whether I could make something low-sugar and gluten-free to substitute carbs. And that's how I came up with this recipe.
I'm basically lazy, so I simplified the amounts of the ingredients, and made it easy to cook for busy mornings.
These basic waffles are not super delicious, but versatile.

Soy powder is easy to burn, so bake in the oven on low setting to finish.
If you use an electric waffle maker, I think you can omit Step 6. Recipe by Momorin7171

Ingredients

1 serving
  • 50 grams●Soy flour
  • 4 grams●Psyllium husk powder
  • 1 pinch●Salt
  • 1 tsp●Sugar substitue syrup
  • 80 mlWater

Steps

    Combine the ● ingredients in a bowl and mix well.

  2. 2

    Add the water to the bowl from Step 1, and mix well. When the dough comes together, let rest for 5 minutes.

  3. 3

    Halve the dough, and shape into balls. Flatten each piece between your palms, and shape it into a patty that is 1 cm thick and 5 cm in diameter.

    Heat the stovetop waffle iron, and coat with oil.

  5. 5

    When the waffle iron is hot enough, put the waffle dough patty on it, and close the lid. Bake for 1 minute over medium-low heat, flip over, and bake for another 2 minutes. Flip over again, and bake for 1 minute.

  6. 6

    To finish, put them in a oven and bake for 5 minutes on low. Done.

  7. 7

    These waffles are plain, so you could sandwich a store-bought hamburger to make a waffle burger. It's delicious.
